5 Fast-Growing Vegetables for Impatient Gardeners

1. Radishes (Ready in 3–4 Weeks!)

Radishes are the undisputed sprinters of the garden. Some varieties mature in as little as 21 days. They thrive in cool weather, so they’re perfect for early spring and fall. Sow the seeds directly in the soil, keep them evenly moist, and you’ll have a crunchy, peppery harvest before you know it. Enjoy on a spring salad or as a snack right out of the ground!

Quick tip:

Be sure to thin them early to prevent overcrowding, which can cause stunted growth. Leave the stunts to the rabbits trying to get them!

2. Lettuce (Ready in 30 days or even less for baby greens!!)

Leaf lettuce grows fast, especially when harvested as baby greens. It’s a cut-and-come-again crop, which means you can snip the outer leaves and let the inner ones keep growing. You’ll get multiple harvests from one planting.

Quick tip:

When selecting varieties to plant, choose loose-leaf varieties like ‘Black Seeded Simpson’ or ‘Oakleaf’ for speed and flavor. Goes great with the radishes!!

3. Spinach (Ready to go in 30–40 days!)

Spinach is another cool-season favorite. It grows quickly and provides a nutrient-packed harvest. Like lettuce, you can harvest it early for baby greens or wait a bit longer for mature leaves.

Quick tip:

It's important to keep soil consistently moist for tender leaves and also to prevent bolting in warm weather. Be careful... Pop-eye might just be stopping by!

4. Green Onions / Scallions (30 Days from prepared "sets")

Also known as scallions, green onions grow super fast when you start from sets (small onion bulbs) that you can buy anywhere they sell veggie starts. Super versatile! You can use them in everything from stir-fries to salads. Even better: they take up very little space and you can easily grow them in any small corner of your garden (or even on a window sill!).​

Quick tip:

Harvest your scallions when they reach pencil thickness - thinner if you want them extra tender. You can also regrow them from store-bought roots in water for a perpetual crop!

5. Bush Beans (50–60 Days, but germinate in 7–10)

These guys take a while longer than others on this list, but bush beans germinate quickly and grow fast once established. You’ll get a full harvest within two months—and they keep producing if you keep picking them. Additionally, if you are REALLLLY impatient, you can eat them after they sprout!

Quick tip:

Make sure to plant after the last frost in your region, and then water them consistently to keep them extra happy (for the best yields!)

5. Bush Beans (50–60 Days, but germinate in 7–10)

Fast-growing vegetables are a great way to build momentum in your garden. They give you quick wins, encourage consistent care, and can even help suppress weeds by covering bare soil. Most importantly, they get you from seed to salad bowl faster than you thought possible.
